How to Make Homemade Strawberry Syrup


Around here we love strawberry season.  A trip to the strawberry patch marks the beginning of school holidays and the long hot days of summer.  And baskets of strawberries on the counter mean jam-making and treat-baking and fresh-strawberry-eating for daaaays.  And also this beautiful stuff which I’ll share with you today…

But in other strawberry news, this year I even tried my hand at some homemade ice cream.  It was pretty delicious, but needs a bit of practice and tweaking before a recipe shows up in this space.  Still, you can’t go wrong serving anything up in individual servings.  Mini mason jars for the win.  (See it here on Instagram.)

So then, when there was just a little bowl of berries left to be used up or eaten, I decided to try something else new that would be quick and simple and no-fail.  I was inspired by this recipe in the newspaper.  I love The Quick Fix column for customizable recipes with just a few ingredients and minimal prep.  My homemade chocolate sauce is from this column, and I recently used this delicious herb pasta recipe which was a big hit.

How to Make Homemade Strawberry Syrup

So with a scant two cups of sliced up strawberries left in the fridge, I put them in a pot with one cup of cold water and set it to boil.  I let it simmer for about ten minutes.  By then the strawberries had lost their bright red colour and looked like a hot mess.  I poured the whole mess through a strainer and into a clean pot back on the burner.  I added a cup of sugar and let it boil again, then simmer for a couple of minutes, stirring till the sugar was completely dissolved.

And that’s it.  Done.  Store it in a bottle with a lid in the refrigerator for up to two weeks.  Obviously I now need to buy these bottles from IKEA.  The only lidded bottle I had was this Starbucks Frappuccino bottle.  (Never throw these out!  You know you’ll use them someday.)  If you’re more type A than I am #haha then you can remove the labelling with this method.

The syrup is so yummy poured over waffles and pancakes, or on ice cream for dessert.  How about added to some homemade iced tea?  Personally I love it added to some sparkling or soda water with a wedge of lime for a not-too-sweet refreshing summer drink.  How would you use your homemade strawberry syrup?   Let me know in the comments…
