Deliciously spiced and light nutmeg spice cake, baked in mini loaf pans it's perfectly sized for snacking or gift-giving.
Last summer we had the good fortune of spending a few days in Boston, MA to do a bit of sightseeing, shopping and eating well. I looked up some of the most highly recommended restaurants ahead of time and one of them was the Flour Bakery. It didn’t disappoint. It had all the charm and character you would want in a neighbourhood bakery/cafe. Plus a completely decadent assortment of baked goods and yummy beverages to go with them.
I bought one of their cookbooks while we were there. It’s equally full of character and decadent recipes, and makes for great reading. I’ve been experimenting with some of the recipes, and this one for nutmeg spice cake has become a favourite. I make it more simply than the book, since I haven’t tried the rum buttercream icing that goes with it yet. I’ll let you know if I can figure it out successfully.
Most cake recipes will easily adapt to being made as cupcakes, or also these mini loaves. One recipe of Nutmeg Spice Cake will make six mini loaves. They’re the perfect size to deliver as little gifts at Valentine’s Day for your friends, neighbours or teachers. There’s just enough to accompany a few cups of tea or coffee at breaktime, or while visiting with a friend. (I buy these cute mini loaf pans at Michael’s, you can sometimes find them in the dollar bins. After Christmas the red ones went on sale for 80% off so I stocked up for Valentine’s Day!)
I usually make three mini loaves, plus one 8 inch round cake for the family. Don’t want the family to feel left out while you give all your baking away, right? The cakes will keep well in the fridge for several days if you wrap them up tightly in plastic wrap, or in the freezer. In fact they taste a little better the next day when the flavours have melded and the texture is a little firmer.
This cake has been such a hit around here that it’s been added to the birthday cake line-up, which so far only includes Perfect Chocolate Cake and Best Banana Cake. Two other no-fail cake recipes! This time I used just a plain buttercream icing to ice it as a layer cake, until I figure out the rum buttercream…
