A homemade muffin mix makes it easy to whip up a quick batch of muffins anytime!
This recipe is perfect for spur-of-the-moment cravings people like me. If you also wake up some mornings wishing there was fresh baking, but there is none, or you have kids who come creeping down after their homework is done looking for some baked goods for a snack, you need to keep this mix in your cupboards. It’s so quick and so versatile, you’ll wonder how you ever kept house without it.
The recipe is originally from the More Time Moms cookbook. It’s a great system of weekly meals, recipes and grocery lists which I followed for a while years ago. If you’re struggling, or are in a slump when it comes to meal prep, I highly recommend trying it for a while to get you back on track.
Anyways, this recipe is tucked into the back of the book amidst a bunch of snack ideas and quick tips. I’m sharing it as it appears in the cookbook, but to be honest, I usually add either some ground flaxseed or some chia seeds, just to add another little boost of nutrition.
This recipe makes a really large quantity, so I keep it in a few big mason jars. One stays in the baking cupboard, and doesn't take too much space. The rest get put further away in the cold room or a top shelf till I need them. When I'm near the end of the last jar, it's time to make more!
I use the mix to make batches of six muffins. That way they all get eaten while they're fresh, and I just whip up another batch when there's a need for midnight snacks, breakfasts on the run, or elevensies. But obviously the recipe can be easily doubled to make a dozen.
The instructions for using the mix are versatile enough to incorporate ingredients and flavours which you probably already have on hand. After a while you'll have some favourites, and remember to always keep those ingredients stocked in your pantry or freezer.

Homemade Quick Muffin Mix
Ingredients
- 3 cups white flour
- 2 cups oats
- 2 cups whole wheat flour
- 1 cup brown sugar
- 1 cup granulated sugar
- 1/3 cup baking powder
- 1 tsp salt
- 1/2 tbsp cinnamon
- 1/2 tsp ground cloves
- 2 1/2 cups instant skim milk powder
Instructions
Mix thoroughly in a very large bowl. Store in a tightly sealed container in a cool dry place.

- 1 egg
- 3 tbsp vegetable oil
- 1/4 cup water
- approx 3/4 cup chopped, grated or mashed fruit or vegetable
- 1/4 cup add-ins
Instructions
1. Preheat oven to 375°F.2. Line muffin tin with 6 muffin cups.3. Add Homemade Quick Muffin Mix into a medium bowl.4. Make a well in the centre of the mxi and add egg, oil and water.5. Stir together slightly until ingredients start to come together.6. Stir in fruit/vegetable and add-ins. Combine just until ingredients are moistened.7. Scoop into muffin cups using an ice cream scoop.8. Bake 18 minutes or until a tester comes out clean.
